The creation of a tea
For me, the creation of a tea always begins in my thoughts. Once the brief is defined, it is my mind that gets to work. I need a little time before starting a creation. This time is very important for inspiration to arrive. I imagine the aromas, the pairings, the emotions; I build a story in my head and mentally create the new recipe.
The aromas come as the story is created. The creation is only easier afterwards.
The more I taste teas, the more I discover and memorise raw materials, the more I open myself to new smells, new combinations, the more I fertilise my imagination and my creativity.
Every moment is important. Being sensitive to smells, textures… to the five senses allows a wonderful openness to life and to cultivate a great sensitivity. This enriches my library every day. It is truly a real plus for creations.
The creative process of our 35 - Christmas Tea
I started from my childhood memories, in Alsace, visiting the Christmas markets. All the senses are awakened. The music, the twinkling lights, the falling night, the cold that penetrates us, all of this contributes to the atmosphere and adds to the aromas of mulled wine, gingerbread and honey that intoxicate us.
I then continue my mental journey and find myself in front of those wonderful traditional cakes that my German aunt took care to make for us every year. A feast for the eyes and the nose! One in particular comes to mind: a small, all-white, crunchy cake, with an aroma both indulgent and fresh, a cake with the scent of anise…
From this anise aroma, my thoughts travel to Asia to transport me to a small market in Vietnam, in front of that majestic spice: star anise… a star for Christmas, a beautiful inspiration! This spice is magical. It brings a liquorice, aniseed and woody world. Its notes are deep and intoxicating. But this spice is not only appealing for its aromas — it also has very interesting virtues for health, notably digestion. A real asset during this period when overindulgence can be frequent…
The creation begins
The tea I select is a green tea with delicate notes at once vegetal, mineral and zesty. It is sourced directly from the beautiful mountains of Nepal.
I give it a liquorice and woody attack by combining star anise and cassia cinnamon. Clove brings nuance and depth. These warm, indulgent notes are rounded by orange zest. Pink berries make the link with the fresher, vegetal, aniseed and flowery notes of the fennel and the tea. The tannins support the aromas without covering them and offer a velvety texture.
Without any added flavouring, all the aromatic richness is brought by the tea, the spices and the other plants.
It is good to taste and good for health. It can be drunk without moderation to transport whoever wishes, sometimes into the Christmas atmosphere, sometimes to the other side of the world in a Nepalese tea field at 1,600 metres in altitude, under the mist, or into the other countries of Asia in search of all these spices.
