The process of creating a Signature Tea is rich and meticulous. A Signature Tea begins above all with a human encounter and attentive listening to needs. Maison nunshen seeks to grasp as fully as possible its knowledge of the establishment, the olfactory imprints of the place, the identity of the chef’s cuisine and, therefore, their signature ingredients.

Tell us, how does a collaboration with a great chef unfold?
It all begins with an encounter. We talk about the cuisine, the chef’s personality, their sources of inspiration. Then comes a sensory encounter around the tasting of tea and dishes, which helps us better define the client’s aspirations and desires. Whether for the creation of a signature tea or for food-and-tea pairings, it is always for me a four-handed work with the chef, a co-creation to offer a unique experience that perfectly reflects the DNA of the chef’s cuisine.
How do you pair tea and gastronomy?
It’s hard to steal the spotlight from wine, which holds a very traditional place in gastronomy. But we also work with a new generation of sommeliers very open to discovering other drinks to showcase dishes. Firstly because more and more customers are drawn to the idea of an alcohol-free meal, but also because there is a certain curiosity to share new taste and sensory experiences. And tea also offers a certain ceremony that opens new perspectives for chefs.
What are nunshen’s projects with the world of gastronomy?
The great project is to bring tea to the table by developing unique rituals and innovating around cuisine, hand in hand with great chefs. It is also a way of offering tea at every moment of the day, of proposing another way of consuming it than we are used to in France and even in Europe. Finally, nunshen wishes to pursue its foremost ambition of passing on its passion and its knowledge, its understanding of the world of tea, to allow the simple enthusiast to become a true connoisseur.
