nunshen’s new Taiwanese Oolongs: a sensory journey at high altitude

Taiwan is a favourite land for Oolong lovers. Among its most prized treasures, Gao Shan Cha, or “high-mountain teas”, stand out for their exceptional quality, the fruit of cultivation at over 1,000 m in altitude. This altitude directly influences the taste and aroma of the tea, giving these crus a remarkable complexity and finesse. Today, nunshen presents three new references emblematic of this tradition: the Alishan Milky Oolong, the Lishan Autumn Oolong and the Lishan Spring Oolong.

Alishan Milky Oolong: the softness of Jin Xuan

Grown on the heights of Alishan, this Milky Oolong comes from the Jin Xuan cultivar, renowned for its naturally milky and floral notes. Unlike other teas that receive added milk aromas, this Oolong owes its unique profile to the tea variety alone. In the cup, it stands out for its indulgent nuances of warm milk, vanilla and fresh butter, offering a creamy texture and unrivalled aromatic persistence.

During this immersion, Carine Baudry had the opportunity to meet passionate producers, guardians of an ancestral know-how. Each exchange was a source of enrichment, highlighting the importance of terroir, rolling techniques and the degree of oxidation in the creation of an exceptional Oolong.

Lishan Autumn Oolong: the elegance of an autumn Oolong

From the Ching Shin cultivar, this tea is grown between 1,700 and 2,000 m in altitude. The autumn harvest gives it a subtle, round floral profile of great softness.

Less intense than its spring counterpart, it is characterised by an accessible aromatic finesse, perfect for those who wish to discover the richness of high-mountain teas without too pronounced an intensity.

Lishan Spring Oolong: the quintessence of spring

Grown on the same heights as its autumn counterpart, this Lishan Oolong stands out for a more intense and varied aromatic palette. In the cup, it reveals an exalting floral dominance, accompanied by subtle vanilla, fruity and vegetal notes. Its complexity unfolds over the course of the infusions, offering a deep and evolving sensory experience.

As in oenology, the choice of cultivar plays a fundamental role in the tea’s identity. The teas presented here illustrate this diversity while retaining a common typicity: light oxidation and a predominant floral profile.
