The creative process of the n°11 – Route d’Or tea comes to life with authentic inspirations.
It all begins with the childhood memories of Chef Christian SINICROPI, particularly the walks through the mimosa fields that are so dear to him.
Carine BAUDRY drew inspiration from his stories to select the tea that would best enhance the mimosa, a delicate but essential step.
During the creation, the aim was to achieve a perfect balance, combining vegetal notes with a harmonious structure on the palate, in order to elevate the sensory experience.
The choice then naturally fell on two green teas from Japan: Sencha and Gyokuro, which enhance the mimosa and create this tea of balance and Harmony.
The mimosa, deeply linked to Christian SINICROPI's roots
The mimosa flower is inseparable from Christian SINICROPI, as it represents far more than a simple botanical element for him. This flower, emblematic of his native town, Mandelieu-La-Napoule, has woven a deep emotional bond with him, evoking precious memories of his childhood in the mimosa forests.

Local sourcing
A symbol of the sun and of gold, the Route du Mimosa embodies the winter French Riviera, offering, under a mild climate, a luminous escape where azure blue mingles with the brilliant yellow of the flowers, for a unique itinerant getaway.
The choice of the mimosa flower at the heart of the tea reflects the desire to highlight the richness of the Riviera terroir. It was in the Tanneron Massif, the cradle of mimosa cultivation, that Carine BAUDRY and Christian SINICROPI met Alix ABELLO — a passionate “nose” belonging to the third generation of mimosa growers in his family. With deep family roots, this mimosa grower masters a unique know-how.
The entire harvesting process is carried out by hand in the hills of the plantations. The production, respectful of the environment, is grown without any sprayed phytosanitary products, without pesticides or fertilisers, to preserve the integrity of the land and offer an authentic production.
It is with this goldsmith’s work that the best of the mimosa could be selected and incorporated into the n°11 – Route d’Or tea.
