Christian SINICROPI, Ambassador of French Gastronomy
A child of the PACA region, Christian SINICROPI is one of the ambassadors of French gastronomy and of his native Mediterranean region.
The Michelin Guide, the true bible of gastronomy, crowned the Chef and his team with two stars for 17 years, thus consecrating his culinary excellence and his commitment to the art of haute cuisine.
His exceptional talent and his incomparable culinary know-how were also highlighted by a score of 18/20 from the famous Gault et Millau Guide.
It is with a great sensitivity to respect for the living and the sensory that his signature cuisine enhances so many dishes.
Carine Baudry, Tea Master with a sensory approach
A Tea Master specialising in tea and infusions for almost 20 years, Carine BAUDRY has developed a teaching method where the olfactory approach is at the heart of the training.
She travels the plantations of the whole world to meet tea producers, both for research missions and for the sourcing of quality crus.
She is today Sourcing and Creation Director of the nunshen Maison. In this role, she works closely with the chefs and sommeliers of great establishments to promote tea as a gastronomic drink.
Convinced that tea and infusions are wonderful alternatives for pairings at the table, she lets her expertise shine in the art of pairing tea with food, as well as in the mastery of service like a tea sommelier.
A meeting with the world of tea
The n°11 – Route d’Or is a jewel born of the collaboration between Carine BAUDRY and Christian SINICROPI.
A meeting that was above all human, marked by a deep connection and mutual trust. They share a great common sensitivity for respect for the living and the sensory.
As Christian SINICROPI likes to point out, “it is an association of knowledge within an intelligent collective”.
This collaboration gives rise to a true creative effervescence. Together, they imagine staging the sensitivity and the elements of the PACA region, with which Christian SINICROPI is used to cooking, while incorporating the magic of tea.
This synergy between two worlds, so alike in their exigence as in their creativity, opens up an infinite field of possibilities and enhances an ingredient of the Chef’s signature dishes: the Mimosa.
Together, they thus imagine the Route d’Or tea, an elegant bouquet of mimosa, heightened by the fresh, vegetal nuances of green tea.
